A real Naples pizzeria in Soho. Ninety seconds in a 485°C fire — then it’s yours. Tap a topping and build it right here.
01 — The idea
Strict about the dough.
Wild about the rest.
One tension runs the whole room. The discipline of the Vera Pizza law — San Marzano DOP, fior di latte, a 48-hour ferment, ninety seconds at 485°C, not one shortcut — held against the joy of a real Naples pizzeria: loud, red, blistered, basil torn over the top.
Three real ingredients, a dough left two days, a fire we never rush. The method is law.
Then we let go — leopard char, molten mozzarella, basil, plates that land loud.
The method
No fake awards, no invented reviews — just the four rules the kitchen runs on.
Strict about the dough. Wild about the rest.
Grab a table02 — Love your space
Red tiles, live flame, and the whole place built around the fire so you can watch your pie go in and come out ninety seconds later. Louder and more generous than anywhere near it — and we built this page to put you in it before you ever book.
03 — The oven
The flavour is made in the two days before the pie ever sees the flame — a slow ferment, three real ingredients, and a fire we keep at temperature all night.
Flour, water, salt, a whisper of yeast — left two days so it’s light, digestible and blisters properly.
San Marzano DOP tomatoes, fior di latte, extra-virgin olive oil. Named suppliers, no shortcuts.
485°C on the oven floor. Leopard char, molten centre, straight to your table — the loud, fast finish.
